There’s certainly nothing beautiful or glamorous about this Slow Cooker Cannellini Bean Stew with Sausage, and Kale from Kalyn’s Kitchen, but this recipe is so delicious and comforting that I’ve made it many times since I first posted the recipe in 2009. I use hot turkey Italian Sausage to give it a little kick, and love to eat it with plenty of freshly-grated Parmesan cheese on top. The soup freezes well, so if you have a big slow cooker I’d double the recipe!
Cannellini beans are a type of white kidney bean, but if you don’t have those use any type of white beans you’d like in this Slow Cooker Cannellini bean Stew. But don’t skip the flavorful Italian sausage and the grated Parmesan cheese on top!
Ingredients for Slow Cooker Cannellini Bean Stew with Sausage, and Kale:
- Hot turkey Italian sausage
- olive oil
- canned petite dice tomatoes
- canned Cannellini beans
- garlic, dried basil
- dried oregano
- ground fennel
- chicken stock
- chopped kale
- For serving: freshly-grated Parmesan cheese.

This is just the type of soup I love to make in big batches in the winter. I freeze it, use it for Soup Swap, and savor it on cold, snowy days.
