I’m a big cauliflower fan, and I love the combination of cauliflower and cheese, so of course this Slow Cooker Cheesy Bacon Cauliflower from 365 Days of Slow Cooking sounds like a delicious side dish to me, and I love that Karen made this in the Crock-Pot Casserole Crock Slow Cooker. I’d love this for a side dish any time of year, but I think a side dish like this is especially perfect when it’s summer and you don’t want to turn on the stove. Just add some juicy grilled chicken breasts and you’ve got a great dinner!
The recipe starts with raw cauliflower in the slow cooker that’s covered with an easy home-made cheese sauce, then more cheese. When the cauliflower is done you add crumbled bacon, season with salt and pepper, and devour! That’s all! And if you don’t have the Casserole Crock-Pot that Karen used, you can make this in any large oval slow cooker.
