I’m don’t have to tell you that there’s a big football game this week, do I? You can use your slow cooker to make traditional Superbowl party fare like Dips, Pulled Pork, or Chili but if you’d like something new to eat during the game, I think these Slow Cooker Chicken Fajita Rice Bowls from 365 Days of Slow Cooking sound perfect. And I love that the vegetables are sauteed at the last minute so they’re still a bit crisp when you serve them over the rice, black bean, and chicken mixture. Touchdown for this recipe!

- Boneless, skinless chicken thighs

- bay leaf
- garlic salt
- green or red bell pepper
