And what I call Summer Dinners on this site are meals where the main part of the meal is made in the slow cooker or pressure cooker (keeping the kitchen cool!) and then it’s served with other cooling foods.
For this Slow Cooker Chipotle Shredded Pork from 365 Days of Slow Cooking, I’d serve the hot spicy pork with avocado, lettuce, and maybe some salsa to cool it down in a taco, inside a burrito, or on a salad. I think the way the slow cooker makes pork juicy and tender is kind of magical, and this sounds delicious to me!

- 1 cup diced white onion
- 1/4 cup fresh lime juice (for me this was 1 lime)
- 2 Tbsp apple cider vinegar

- 1 Tbsp dried oregano
- 1 Tbsp ground cumin
- 1 Tbsp kosher salt
- 1 tsp pepper
- 1/2 cup water
- 2 1/2-3 lbs pork loin
