Slow Cooker Frittata with Artichoke Hearts, Roasted Peppers, and Feta is perfect for a leisurely weekend morning. This is easy to make in the Crock-Pot Casserole Crock Slow Cooker, or use a large oval slow cooker if that’s what you have!
I know there are plenty of people who don’t have a Crock-Pot Casserole Crock Slow Cooker yet, so when I share a recipe I’ve made in the Casserole Crock I try to give recommendations for possible slow cookers that can be used for the recipe. This week I’m featuring a recipe I actually made in the Ninja Cooker, and if you have that or a large oval slow cooker, you can certainly use that for this Slow Cooker Frittata with Artichoke Hearts, Roasted Peppers, and Feta. But now that I have the Casserole Crock, that would absolutely be my choice for this type of egg dish!
I’ve become a total convert to the idea of cooking eggs in the slow cooker, partly because of the way the slower cooking time infuses the eggs with the flavors of the other ingredients and partly because this way of cooking eggs is so effortless. This tasty frittata with artichokes is something I’d make on the weekend and reheat for breakfast until it was gone, which is why it’s filed with the Weekend Food Prep ideas on Kalyn’s Kitchen!
If you’re not a fan of Feta, another type of white cheese would also be fine here. Remember the slow cooker won’t brown the top of the frittata the same way it does when you cook it on the stove, so some freshly chopped parsley adds a nice pop of color. (Or if you make it in the Casserole Crock, put it in the oven to brown for a few minutes.)
Ingredients for Slow Cooker Frittata with Artichoke Hearts, Roasted Peppers, and Feta:
- Artichoke hearts
- roasted red peppers (from a jar)
- green onions
- Feta cheese
- Spike Seasoning (or another all-purpose seasoning blend)
- black pepper
- chopped parsley for garnish.
Recommended Slow Cooker Size:
I made this in the Ninja Cooker back in 2013, but now I would definitely make it in the Crock-Pot Casserole Crock Slow Cooker. I’m sure you could also make this in a large oval slow cooker if that’s what you have.
