This Low-Carb Slow Cooker Frittata with Kale, Roasted Red Pepper, and Feta is a healthy start to the day! This recipe is perfect for the Crock-Pot Casserole Crock Slow Cooker but use any large oval slow cooker if that’s what you have.
Today I’m featuring this Low-Carb Slow Cooker Frittata with Kale, Roasted Red Pepper, and Feta from Kalyn’s kitchen that was the very first time I ever cooked eggs in the slow cooker! This was before the Crock-Pot Casserole Crock Slow Cooker came along and the recipe turned out beautifully in the Ninja Cooker, but now that I have the Casserole Crock I would definitely use that.
This recipe is the kind of healthy egg dish I love to make on the weekend and re-heat in the microwave during the week, and using a slow cooker for cooking eggs infuses the eggs with the flavors of the other ingredients. This slow cooker frittata is suitable for the South Beach Diet or other low-carb eating plans and it’s also vegetarian, and it’s one of my personal faves, enjoy!
Ingredients for Low-Carb Slow Cooker Frittata with Kale, Roasted Red Pepper, and Feta:
- Olive oil
- baby kale
- roasted red peppers
- green onion
- crumbled feta
- Spike Seasoning or other all-purpose seasoning blen
- fresh ground black pepper to taste
- low-fat sour cream for serving (optional)
Recommended Slow Cooker Size:
I made this tasty frittata in my Ninja Cooker, but it’s also perfect to make in the Crock-Pot Casserole Crock Slow Cooker if you have one! And of course you can also make this in any large oval slow cooker, just be sure to spray the crock well with non-stick spray!
