I love the challenge of making a low-carb dinner that really feels like a treat, and this Green Chile Shredded Beef Cabbage Bowl from Kalyn’s Kitchen is a favorite dinner I’ve made many times since I came up with the recipe! The combination of slightly-spicy green chiles with beef, spicy cabbage slaw, and avocado salsa is completely a winner, and I love all those flavors. And I love meals like this where the entire meal is served in one bowl!
You can make the spicy beef for this favorite dinner in the Instant Pot or in the slow cooker, whichever you prefer; hope you enjoy!

- beef chuck roast
- Kalyn’s Taco Seasoning, or use your favorite spices for tacos
- olive oil
- canned diced green chiles
- beef stock for Instant Pot version
- green cabbage
- red cabbage
- green onion
- mayo
