Green Chile Shredded Beef Cabbage Bowl is a delicious low-carb meal to start out the year; make it in the slow cooker or the pressure cooker.
It’s New Year’s Day and I’m in Oaxaca Mexico, but I know that lots of people who aren’t traveling are starting out on a low-carb eating plan today, right? Anyone who’s watching their carb intake for weight loss or for health reasons knows how boring a low-carb diet can get if you don’t stay creative; after a while it can feel like you never eat anything but meat and salad! So I love the challenge of coming up with a low-carb menu option that really does feel like a treat, and this Green Chile Shredded Beef Cabbage Bowl from Kalyn’s Kitchen is one of my favorite slow cooker or pressure cooker meals ever.
The combination of slightly-spicy green chile beef, spicy cabbage slaw, and avocado is completely a winner; hope you enjoy! And if you prefer you can definitely use the pressure cooker directions and make this spicy beef in the Instant Pot or electric pressure cooker instead, which will make this dinner quick to get on the table!
