My friend Gina at Skinnytaste has been really efficient about adapting some of her favorite slow cooker recipes to Instant Pot versions, and this recipe for Cuban Picadillo from Skinnytaste now has versions for the slow cooker, Instant Pot, or on the stovetop! And this has been one of the most popular recipes featured on this site, so we’re reminding you about it for Friday Favorites this week! Gina says this is on monthly rotation at her house because it’s a favorite with her kids.
If you’re not familiar with Picadillo, it’s a Cuban or Spanish dish made of ground beef simmered in a sauce that includes tomatoes, green olives, bell peppers, cumin, and spices. Gina recommends serving this over brown rice, but you could also eat it plain, in lettuce wraps, or with Cauliflower Rice for a low-carb or South Beach Diet friendly main dish.
Ingredients for Cuban Picadillo:
- lean ground beef
- red peppers
- Alcaparrado (Manzanilla olives, pimientos, capers) or green olives
- ground cumin
- garlic powder
- bay leaves
- kosher salt and fresh pepper
