My friend Gina at Skinnytaste has really been on the ball at adapting some of her favorite slow cooker recipes to Instant Pot versions, and this recipe for Cuban Picadillo from Skinnytaste now has versions for making it in the slow cooker, Instant Pot, or on the stovetop, so we’re updating the recipe for Friday Favorites this week! Gina says this is on monthly rotation at her house because it’s a favorite with her kids.
If you’re not familiar with Picadillo, it’s a Cuban or Spanish dish made of ground beef simmered in a sauce that includes tomatoes, green olives, bell peppers, cumin, and spices. Gina recommends serving this over brown rice, but you could also eat it plain, in lettuce wraps, or with Cauliflower Rice for a low-carb, Paleo, or South Beach Diet friendly main dish.
