My love for lentils is well-documented, but for soup I especially love red lentils, which cook quickly and dissolve to thicken the soup. When I created this CrockPot Red Lentil, Chickpea, and Tomato Soup with Smoked Paprika for Kalyn’s Kitchen, it took me a few tries to get it just right, but I served the final version to my brother Mark and his wife Lisa when they stopped for a visit, and both of them gave it a thumbs up! This is a perfect recipe for a meatless dinner, and it’s vegan if you use vegetable stock.

- olive oil
- smoked paprika
- sweet paprika
- dried thyme
- salt or Vege-sal
- fresh ground black pepper
- red lentils
- canned chickpeas
- canned chicken or vegetable broth
- canned petite dice tomatoes
- sour cream or plain yogurt for serving (optional)
