Slow Cooker Red Lentil, Chickpea, and Tomato Soup with Smoked Paprika is delicious and comforting when you want a meatless meal!
(For Friday Favorites we spotlight past recipes that you may have missed, and this delicious Slow Cooker Red Lentil, Chickpea, and Tomato Soup with Smoked Paprika is warm and comforting when it’s cold outside. And it’s one of my personal favorites, tested and approved on my main blog, Kalyn’s Kitchen. Hope you enjoy!)
My love for lentils is well-documented, but for soup I especially love red lentils, which cook quickly and dissolve to thicken the soup. When I created this CrockPot Red Lentil, Chickpea, and Tomato Soup with Smoked Paprika for Kalyn’s Kitchen, it took me a few tries to get it just right, but I served the final version to my brother Mark and his wife Lisa when they stopped for a visit, and both of them gave it a thumbs up! This is a perfect recipe for a Meatless Monday dinner, and it’s vegan if you use vegetable stock.
