I know a lot of you love from-scratch slow cooker recipes that can cook all day, and this Slow Cooker Rosemary and Thyme Potato Soup from Barefeet in the Kitchen can cook 8-10 hours while you’re at work (or out having fun.) Then when you get home you need another hour on low with the final ingredients added, and dinner is on the table!
This would be delicious any time, but I also think this potato soup would make a tasty Meatless Monday meal. (Tip: If you don’t have the ground rosemary this recipe calls for, use a Mortar and Pestle or spice grinder to grind up some dried rosemary.)

- yellow onion
- kosher salt

- crushed thyme
- ground rosemary
- chicken or vegetable stock
- half and half or cream
