It took three tries to perfect this dish so I had the moist chicken with spicy salsa flavor, topped with gooey melted cheese that I wanted. In the final version the chicken is cooked in the slow cooker with salsa that was reduced so it wouldn’t get watery; then the tender salsa-flavored chicken is topped with cheese and put under the broiler for a few minutes.
