Salsa Chicken with Lime and Melted Mozzarella made in the slow cooker has been a huge hit on Kalyn’s Kitchen for years! This recipe was so popular that I recently decided we had to have an Instant Pot version of this favorite recipe. Just like it did with the slow cooker version, it took a few tries to perfect Instant Pot Salsa Chicken with Lime and Melted Mozzarella, but now there are two versions of this recipe that will produce moist chicken with spicy salsa flavor, topped with gooey melted cheese.
It was worth all the experiments, because this Salsa Chicken with Lime and Melted Mozzarella is a complete keeper no matter which way you make it! This is super-quick in the Instant Pot, and if you prefer the slow cooker this is a good one to try when you only have a few hours, but you’d like the convenience of not having to watch dinner. For either cooking method you’ll need to use the broiler a few minutes at the end, or if you have a toaster oven it will work well for that step.

- Mild or medium salsa
- boneless, skinless chicken breasts
- salt and fresh-ground black pepper
- fresh-squeezed lime juice
- grated low-fat mozzarella
Recommended Size Slow Cooker or Instant Pot for this Recipe:
I used a Crock-Pot 3-1/2-Quart Slow Cooker or a 6 Quart Instant Pot for this recipe. You need a slow cooker that’s big enough to put the chicken in a single layer.
