A few years ago I became fixated on the idea of making delicious slow cooker shredded beef to use for tacos, and these Shredded Beef Tacos with Spicy Slaw and Avocado from Kalyn’s Kitchen were the final result (after a couple of tries that needed improvement.) The meat for these tacos is loaded with flavor, and you can cook the tacos in the CrockPot without watching it or when it’s too hot to turn on the stove! And if you use low-carb tortillas, these are delicious for a low-carb dinner the whole family will like.
Fast forward a few years later and now I’m noticing that a lot of recipes I make in the slow cooker are also perfect to make in the Instant Pot or Electric Pressure Cooker. Or just make the flank steak tacos, which are also a delicious low-carb meal.

I made this a couple of weeks ago. It was very good, but made so much meat that I ended up freezing some of it.
And I've never tried making beef for French Dip; must try that!
