If you’re lucky enough to have a casserole crock (or if you get one for Christmas!) this tasty-sounding lasagna from Pinch of Yum is not only easy to get into the slow cooker, but it’s family friendly and loaded with healthy goodness from the generous amount of chopped kale that’s layered between the noodles and sauce.
The recipe also has a minimal amount of low-fat cheese and the proportion of vegetables to other ingredients is high. Lindsay uses sauce from a jar, but you can definitely use your own homemade sauce as well.
