It’s a trick I’ve loved since the first time I tried it, and this recipe for Slow Cooker Spicy Brown Rice and Black Bean Cheesy Bowl from Kalyn’s Kitchen shows off perfectly how the slow cooker can transform canned beans and raw rice into a bowl meal that’s loaded with south-of-the-border flavors. We loved this with chunks of string cheese melted into the rice and beans mixture, but if you prefer, leave out the cheese and optional sour cream for a vegan meal.

- canned black beans
- uncooked brown rice
- canned Anaheim green chiles
- vegetable broth
- ground cumin
- Mexican Oregano
- Goya Sazon (optional, but recommended)
- string cheese or cubed Mozzarella
- green onions
- for serving: salsa, diced avocado, sour cream
