If you can’t find these cute little round zucchini, use a big one, cut in thick slices, stand up the slices, and scoop out the flesh to make “cups” to hold the filling.)
Have you heard of courgettes? That’s the European name for zucchini, and this delicious-sounding recipe for Slow Cooker Stuffed Courgettes (Zucchini) with Egg Lemon Sauce from On Top of Spaghetti comes to us from Greece. Of course, if you’re familiar with Greek cooking, you might have guessed that from the Egg-Lemon sauce that Eleni uses. I love all things Greek, and I was wowed by the idea of starting with raw rice in the stuffing, which is softened while it cooks in the slow cooker. If you don’t have round zucchini like the ones in the photo, you can make this with long ones as well.

- Round or long zucchini (courgettes)
- ground beef and/or pork
- onion, parsley
- dill weed
- Arborio rice
- salt and pepper
- dried thyme
- olive oil
- vegetable or chicken stock
- lemon juice
