If the cold weather is really getting to you, maybe a Taco Tuesday dinner that’s loaded with fresh flavors can help dispel the winter blues! And the pork for these amazing looking Slow Cooker Tacos al Pastor from Gimme Some Oven can cook for 8-10 hours in the slow cooker, so this can cook all day while you’re at work. When you get home, cut up some fresh pineapple and any other toppings you’d like and dinner is ready!
Of course it’s the addition of fresh pineapple that really caught my eye here, but if fresh pineapple isn’t in the budget this time of year, Ali suggests crumbled goat cheese, chopped fresh cilantro leaves, chopped red onions, diced avocado, or thinly-sliced radishes for other possible toppings. And I think guacamole would be delicious on these tacos too!
