This delicious Slow Cooker Thai-Inspired Butternut Squash and Peanut Soup from Kalyn’s Kitchen is one of my all-time favorite slow cooker soups! I’m a huge fan of butternut squash, but I never got too excited about butternut squash soup until I tried this Slow Cooker Thai-Inspired Butternut Squash and Peanut Soup with Red Bell Pepper, Lime, and Cilantro. This recipe has the kind of flavors that I think make Thai food so appealing, and I’d love this soup for a meatless dinner!
And this delicious soup is vegetarian and can even be vegan if you use vegan fish sauce. I think the addition of chopped peanuts and cilantro is the perfect way to serve it, but take your choice on that!
Ingredients for Slow Cooker Thai-Inspired Butternut Squash and Peanut Soup:
- peeled and cubed butternut squash
- vegetable stock
- salt
- pepper
- olive oil
- onion
- garlic
- ginger root
- red bell pepper
- coconut milk
- Thai Red Curry Paste
- natural peanut butter
- sweetener of your choice
- fish sauce (or “vegan fish sauce” or soy sauce)
- lime juice
- cilantro
- chopped peanuts
- Sriracha Sauce for serving, if desired
