Slow Cooker Turkey (or Chicken) Soup with Kale and Sweet Potatoes is a wonderful way to use that leftover Thanksgiving turkey!
One of my favorite things to do on the weekend after Thanksgiving is to take the turkey carcass with some onions, carrots, celery and a little Penzeys Turkey Soup Base and turn it into delicious Turkey Stock. Then I’ll use the stock to make a big slow cooker full of turkey soup. I’ve already shared Ten Amazing Recipes for Slow Cooker Turkey Soup, but this Slow Cooker Turkey (or Chicken) Soup with Kale and Sweet Potatoes is another of my personal favorites from Kalyn’s Kitchen. Ingredients for Slow Cooker Turkey (or Chicken) Soup with Kale and Sweet Potatoes:
- homemade turkey stock or homemade chicken stock (or use canned broth)
- Penzeys Turkey Soup Base (or chicken soup base, optional but recommended)
- poultry seasoning
- dried thyme
- fresh-ground black pepper
- sweet potatoes
- cooked chopped turkey or chicken
- finely chopped kale
- balsamic vinegar
