I think starting with dried beans is especially good for a stew like this, where the cooking liquid adds to the flavor of the finished dish. This recipe uses a large slow cooker and makes a lot, but would be great to pull out of the freezer on one of those cold spring nights.

- bay leaf
- dried rosemary
- dried thyme
- dried oregano
- ground black pepper
- diced tomatoes
- chopped leafy greens
- For serving: rice, polenta, or bread.
