I’m a huge fan of lentils of every type, but I especially love the way yellow or red lentils add color to soup. In this Yellow Lentil and Spinach Vegan Soup from Soup Chick, yellow lentils simmer in the slow cooker with ginger paste, garlic, tomato paste, cumin, coriander, garam masala, turmeric, salt, pepper, and a generous amount of water. Then when the lentils are starting to fall apart, the soup is finished with coconut milk and spinach. I love Indian flavors with lentils, so this sounds like a wonderful meatless dinner to me.
