Slow Cooker Root Vegetable Stew Recipe from Gimme Some Oven

I can tell that this Slow Cooker Root Vegetable Stew from Gimme Some Oven will be loaded with flavor by the way Ali seasons it with lots of garlic, bay leaves, and sage, and I was already convinced before I got to the part of the recipe where she stirs in a little chopped kale at the end.  Topping the stew with fried sage is definitely optional, but I think that's the perfect final touch on this wonderful-sounding Meatless Monday dish!

  1. I love the convenience of the slow cooker for making vegetable stews. On the stovetop, they require a lot of tending. In the crockpot, it's easy, and the vegetables become tender without turning to mush.
