Slow Cooker Mexican Chicken Fajitas from Shockingly Delicious

Slow Cooker Mexican Chicken Fajitas
Slow Cooker Mexican Chicken Fajitas are perfect when it's too hot to cook!  (Photo from Shockingly Delicious.)

Dorothy from Shockingly Delicious admits that these Slow Cooker Mexican Chicken Fajitas are not "your usual sizzling, sputtering meat brought to the table in a superheated skillet" but she says these "Faux Fajitas" are still delicious eaten on a bed of greens, over rice, or eaten inside a tortilla.  I agree, and to me this sounds perfect for our collection of Slow Cooker Summer Dinners.  I especially love that this recipe uses those sweet mini-peppers that come with different colors in a bag, which pretty much guarantees a colorful result!

Great idea for a summer dinner. I can't bear to put anything in the oven these days, and the slow cooker really keeps the kitchen cool.

Lydia, I agree about the oven and I thought the seasonings in this sounded so good.
