Dorothy from Shockingly Delicious admits that these Slow Cooker Mexican Chicken Fajitas are not "your usual sizzling, sputtering meat brought to the table in a superheated skillet" but she says these "Faux Fajitas" are still delicious eaten on a bed of greens, over rice, or eaten inside a tortilla.  I agree, and to me this sounds perfect for our collection of Slow Cooker Summer Dinners.  I especially love that this recipe uses those sweet mini-peppers that come with different colors in a bag, which pretty much guarantees a colorful result!
