This recipe for Shrimp and Artichoke Barley Risotto from Cara's Cravings features barley cooked in the crockpot with onion, garlic, and artichoke hearts and shrimp, lemon zest, and some baby spinach added at the end, along with some Parmesan cheese.  Doesn't that sound like a good combination.  The recipe does call for a commercial lobster bouillon base, but Cara specifies you can use chicken or seafood broth instead if you prefer.
