On cold nights, there's nothing that sounds much better than a hot bowl of soup, and this Vegetarian Enchilada Soup from Louanne's Kitchen sounds like a good one.  The hearty soup has onions, chicken or veggie stock, tomatoes, green chile enchilada sauce, kidney beans, black beans, corn, and hominy, with just the right spices to add plenty of flavor.  Family members can add cheese, green onions, cheese, or even chips at the table for a great Meatless Monday dinner.

  • Onions
  • garlic
  • cumin
  • chili powder
  • dried oregano
  • bay leaf
  • chicken or vegetable stock
  • spicy canned tomatoes or regular tomatoes
  • canned green enchilada sauce
  • canned red kidney beans
  • canned Black beans
  • canned corn
  • canned hominy
  • extra virgin olive oil
  • Garnishes:  Greek yogurt or sour cream, shredded cheese, green onions, cilantro, tortilla chips.
