I love that this Slow Cooker Chicken Chile Verde from Two Peas and Their Pod starts with tomatillos and Anaheim chiles being roasted in the oven, and every ingredient in the from-scratch sauce used in this recipe sounds perfect to me.  With some rice, beans, and maybe a few flour tortillas, I think this would make a fantastic dinner, or serve over greens or zucchini noodles for a low-carb meal.
