In Utah we're having that spring weather where one day feels like summer and the next day Mother Nature reminds us winter isn't quite done yet.  I think a light meatless soup like this Crock Pot Vegetarian Minestrone Soup from Skinnytaste would make a great choice for a family-friendly Meatless Monday dinner this time of year.  There's lots of flavor from vegetables and herbs, and Gina uses the trick of cooking the soup with a hunk of Parmesan rind for extra flavor.

Ingredients for this CrockPot Recipe:
  • Canned white beans
  • Vegetable broth (or chicken broth if you don't care if it's vegetarian)
  • olive oil
  • onion
  • carrots
  • celery
  • garlic
  • canned petite dice tomatoes
  • Parmesan rind (optional)
  • rosemary
  • bay leaves
  • basil
  • Italian parsley
  • salt and pepper
  • zucchini
  • spinach
  • small pasta
  • For serving:  Extra Parmesan cheese

  1. Hiya, you'd have to replace the chicken broth with vegetarian option (such as veggie broth/stock cube) in order to class this as vegetarian! Otherwise it looks yum! :) El x

  2. Hi Eleanor, it does say that in the instructions on Skinnytaste, so that's my mistake in copying the ingredients for here. Will fix it, thanks for catching.
