In Utah we're having that spring weather where one day feels like summer and the next day Mother Nature reminds us winter isn't quite done yet.  I think a light meatless soup like this Crock Pot Vegetarian Minestrone Soup from Skinnytaste would make a great choice for a family-friendly Meatless Monday dinner this time of year.  There's lots of flavor from vegetables and herbs, and Gina uses the trick of cooking the soup with a hunk of Parmesan rind for extra flavor.

Ingredients for this CrockPot Recipe:
Canned white beans, Vegetable broth (or chicken broth if you don't care if it's vegetarian), olive oil, onion, carrots, celery, garlic, canned petite dice tomatoes, Parmesan rind (optional), rosemary, bay leaves, basil, Italian parsley, salt and pepper, zucchini, spinach, small pasta.  For serving:  Extra Parmesan cheese.

  1. Hiya, you'd have to replace the chicken broth with vegetarian option (such as veggie broth/stock cube) in order to class this as vegetarian! Otherwise it looks yum! :) El x
