Slow Cooker Vegetarian Minestrone Soup from Skinnytaste

Meatless Minestrone
Meatless Minestrone from Skinnytaste is a perfect Meatless Monday dinner!  (Photo from Skinnytaste.)

In Utah we're having that spring weather where one day feels like summer and the next day Mother Nature reminds us winter isn't quite done yet.  I think a light meatless soup like this Crock Pot Vegetarian Minestrone Soup from Skinnytaste would make a great choice for a family-friendly Meatless Monday dinner this time of year.  There's lots of flavor from vegetables and herbs, and Gina uses the trick of cooking the soup with a hunk of Parmesan rind for extra flavor.
