Creamy Slow Cooker Tomato Soup with Cheesy Quinoa Dippers from Pretty Kitten's Kitchen

I love to see new variations on traditional favorites, and when I spotted this Creamy Slow Cooker Tomato Soup with Cheesy Quinoa Dippers from Pretty Kitten's Kitchen I was charmed by this updated version of the tomato-soup-and-grilled-cheese classic combination.  Kristyn says her husband declared "I think this may be the best tomato soup I've ever eaten," and even her little boy who normally doesn't go for soup gobbled it up, which makes this sound like a great Meatless Monday option for family dinner!  Kristyn used butter and cream in her soup but she says you could use milk or even skim milk, and I'm guessing you could sub olive oil for the butter as well.
