I just keep finding more delicious ideas for our collection of Slow Cooker Summer Dinners, and today I'm drooling a little over these Slow Cooker BBQ Chicken Tostadas with Cole Slaw from Bev Cooks.   Boneless chicken thighs cook in the slow cooker with ingredients that make a from-scratch barbecue sauce, and then the chicken is piled on tostada shells with a delicious-looking healthy slaw made with Greek yogurt.  I'm crazy for cabbage, so I'd really pile on the slaw!
