I think we're due for another idea for Slow Cooker Summer Dinners, and this Slow Cooker Cuban Pork for Tacos and Sandwiches from Elly Says Opa caught my eye.  I loved the sound of the spicy citrus mixture the pork is cooked in, and Elly served it with Jicama Slaw and Chipotle Cream  which also sounded great to me (recipes included).  This can cook all day while you're at work and when you get home the house will still be cool; hope you enjoy!
