This recipe for Slow Cooker Coffee-Chipotle Pulled Chicken Roll-Ups from The Perfect Pantry has all the components that I think make a perfect Slow Cooker Summer Dinner.  First, chicken thighs cook in the slow cooker with flavors like coffee, chipotle, rice vinegar, hot sauce, and chili powder.  Then the spicy chicken is pulled apart and rolled up in tortillas with lettuce and cole slaw to cool down the spicy flavors.  This recipe uses Rhode Island coffee syrup, but if you can't find that, Lydia gives an easy substitute.
