Slow Cooker Salsa Chicken with Lime and Melted Mozzarella from Kalyn's Kitchen

(For Friday Favorites we spotlight recipes from the past that you might have missed,  and this Slow Cooker Salsa Chicken with Lime and Melted Mozzarella has been a huge hit with everyone who's tried it!  You'll need to use the broiler a few minutes but if you have a toaster oven it will work well for that step.)

It took three tries to perfect this dish so I had the moist chicken with spicy salsa flavor, topped with gooey melted cheese that I wanted.  In the final version the chicken is cooked in the slow cooker with salsa that was reduced so it wouldn't get watery; then the tender salsa-flavored chicken is topped with cheese and put under the broiler for a few minutes.  It was worth all the experiments, because this Slow Cooker Salsa Chicken with Lime and Melted Mozzarella from Kalyn's Kitchen is a complete keeper!  This is a good one to try when you only have a few hours, but you'd like the convenience of not having to watch dinner while it's in the slow cooker.

Ingredients for this CrockPot Recipe:
  • Mild or medium salsa
  • boneless, skinless chicken breasts
  • salt and fresh-ground black pepper
  • fresh-squeezed lime juice
  • grated low-fat mozzarella

Recommended Size Slow Cooker for this Recipe:
I used a Crock-Pot 3-1/2-Quart Slow Cooker.  You need a slow cooker that's big enough to put the chicken in a single layer.

  4. So easy and good, loved it!! I was skeptical at first because it seemed too simple to be that tasty...but I was wrong. Definitely a keeper!!!
