You've probably seen one of the recipes recipes for Lasagna Soup that are popping up around the internet.  I love the idea of taking such a popular comfort-meal dish and making it into a slow cooker soup, and Heidi from Foodie Crush has given that a new twist with this Slow Cooker Vegetarian Lasagna Soup that has the same yummy wow factor but without the meat.  What doesn't change is the final step of melting a mixture of ricotta, mozzarella, and herbs into the soup; don't you think this sounds perfect for a Meatless Monday meal?

  • Yellow onion
  • brown mushrooms
  • zucchini
  • garlic
  • tomato sauce
  • crushed tomatoes
  • vegetable broth
  • bay leaves
  • dried oregano
  • dried basil
  • red pepper flakes
  • kosher salt
  • fresh ground black pepper
  • lasagna noodles
  • spinach leaves
