Slow Cooker Sauerkraut Soup with Kielbasa from Coconut and Lime

A delicious cook-all-day slow cooker soup featuring sauerkraut and Kielbasa.

I'm a big fan of sauerkraut, so when I see a recipe that uses it, I always take a second look.  In this Slow Cooker Sauerkraut Soup with Kielbasa from Coconut and Lime, I think the seasonings sound perfect to complement the flavor of the sauerkraut and I also love that Rachel recommends using turkey Kielbasa, which is my personal favorite.

If you're worried about the sourness of the sauerkraut, Rachel says "The soup is much less vinegary-salty than you'd think, it is sort more like a very fragrant cabbage soup."  There are probably not many more soup days left before it's hot outside, so try this soup now and see what you think.

  • onion
  • celery
  • garlic
  • sauerkraut
  • Yukon gold potatoes
  • apple cider vinegar
  • chicken stock
  • thyme
  • caraway
  • black pepper

  1. This is a new idea for me -- I've never cooked with sauerkraut. But I'm eating more cooked cabbage now, so I've got to try this recipe.

  2. Lydia, I have one soup recipe with sauerkraut, and I agree with Rachel that it kind of melts into the soup when it cooks, love the sound of this one.
