I promised a few ideas for Slow Cooker Cinco de Mayo recipes, and I found this delicious-looking Slow Cooker Southwestern Beef Brisket on my friend Lydia's blog The Perfect Pantry.  Lydia says if she's had any wine in the house she might have made her grandmother's famous brisket recipes, but instead she had to improvise and came up with this slightly-sweet-and-spicy brisket recipes that turned out to be a winner!  No matter what else is on your Cinco de Mayo Menu, I bet this would be a hit.

Ingredients for this recipe: 
  • Beef brisket
  • Kosher salt
  • fresh ground black pepper
  • garlic cloves
  • red onions
  • chili powder
  • ground coriander
  • ground cumin
  • cider vinegar
  • chopped tomatoes
  • water
  • whole Chipotle peppers in Adobo
  • bay leaves
  • molasses
