Creative cooks can come up with a good dinner from what's in the fridge, and that's what Amanda from Amanda's Cookin' did for this Slow Cooker Three Bean Salsa Chicken and Rice.  Amanda used some homemade salsa she had leftover from a taco dinner for this recipe, but you can also use salsa from a jar.  The combination of flavors here sounds perfect to me, and this also sounds like another easy slow cooker recipe that's perfect for Cinco de Mayo!

Ingredients for this recipe:
Boneless and skinless chicken breasts, salsa, chicken broth, canned green chiles, canned cannellini beans, canned black beans, canned garbanzo beans, cooked rice (for serving).
