Keep the house cool with this Vegetarian Slow Cooker Mexican Casserole.  (Photos from Amuse Your Bouche.)

I think comfort foods like this Vegetarian Slow Cooker Mexican Casserole from Amuse Your Bouche can taste just as good in the summer when you cool them down a bit with the addition of something like chopped avocado, sour cream, or cold salsa.  And no matter how hot it is ourside, cooking this casserole in the slow cooker will keep the house cool.  (This blog is in the U.K., but you can use a measurement converter to change the recipe to U.S. measurements if needed.)

Ingredients for this CrockPot Recipe:
Butter, milk, eggs, flour, baking powder, smoked paprika, chilli powder, salt, black pepper, canned corn, canned black beans, pickled jalapenos, grated cheese, fresh chopped coriander (cilantro).

  1. I love the way this casserole forms its own crust. Can't wait to try the recipe (and thanks for linking to one of mine).

  2. Lydia, I am intrigued by that as well; I think this sounds delicious!

  3. Thanks for featuring my recipe Kalyn! :)

  4. Would you cook this on High or Low? And for how long? I don't have Med setting. Thanks!

  5. It would be best to ask the blogger who created the recipe, but in general 4 hours on low = 2 hours on high in the slow cooker so the time for medium would probably be bet in the middle. I'd probably use high for these ingredients, but I haven't made the recipe so Becca is your best resource.
