It was a bottle of Armadillo Rub purchased on a trip to Austin that inspired this Slow Cooker Armadillo Beef Brisket from The Perfect Pantry, but you won't have to make a trip to Texas to get those flavors because Lydia has recreated the rub for you in this recipe. Brisket gets perfectly tender and flavorful in the slow cooker, and everything about this spicy brisket with southwestern flavors sounds delicious to me. (Replacing the beer with stock will make this low-carb and gluten-free.)
