Not long ago I bought the new Crock-Pot Casserole Crock Slow Cooker, and since then I've been on the lookout for good ideas to use it. The casserole crock is a slow cooker where the crockery part is in the shape of a casserole dish, so it's perfect for certain recipes, like these Shredded Beef Enchiladas with Green Enchilada Sauce from 365 Days of Slow Cooking.
But you certainly don't have to buy one of these new slow cookers to make these delicious-sounding shredded beef enchiladas. Just use a large oval slow cooker and although the enchiladas might not look quite the same, they will still taste fantastic. You can also cook these delicious beef enchiladas in the oven if you prefer. Recommended Slow Cooker Size:
Karen used the Crock-Pot Casserole Crock Slow Cooker, but any large oval crock-pot will also work, the enchiladas will just be a little more crowded.
