I think we've officially started the countdown to pumpkin day, and everywhere you look there are pumpkin breads, cookies, cakes, and even pumpkin ice cream. Personally I am not really wowed by sweet pumpkin recipes, but give me a savory pumpkin dish like this Crock Pot Pumpkin Lentil Stew from LaaLoosh and I am definitely interested. This vegetarian stew has added flavor from spices like cumin, ginger, turmeric, and nutmeg and other flavorings like lime and a little tomato paste. You can use butternut squash if you prefer, and I think this sounds like a perfect Meatless Monday idea for the slow cooker.
